Okay, by quickly, we don’t mean haphazardly. It is very important that you do your tasks properly and quickly. After all, your job is very important. A food establishment can be penalized and even closed down for sanitary reasons. So, your job is important. You are important. However, you can also do your job quickly without sacrificing thoroughness and cleanliness.
Daily Cleaning Tasks
Unless you are doing spring cleaning for your kitchen, everyday kitchen cleaning should always start with the sink. You have to make sure that it is always empty. This means no dirty glasses or plates. This is actually your benchmark for cleanliness. This is very important in a restaurant kitchen where plates and dining utensils are used throughout the day. If you allow this to pile up, you will be out of plates very soon. So, here’s what you do on a daily basis:
1. Empty the sink and load dirty dishes in the dishwasher. Wipe down the sink. This will take you about a minute to 5 minutes depending on the load and the capacity of your dishwasher.
2. Wipe the stove and counters. This will require you a couple of minutes to do so.
3. Sweep or vacuum the floor. This will take you a couple of minutes or longer depending on how big the kitchen is.
4. Take care of other cleaning tasks specific to your restaurant needs and demands.
Weekly Cleaning Tasks
Here is how to clean the restaurant kitchen quickly on a weekly basis. First of all, you should start with mopping the floors. This will take you five minutes or more depending on the size of your kitchen floors. After mopping, you can then wipe the cabinets and appliances. You may be required to do this on a daily basis in some restaurant kitchens. This task will take you about 10 minutes.
After wiping the cabinets and appliances, you can then wash the dish rack. This will take you about 5 minutes. You may be required to do this on a daily basis. Again, this depends on your stewarding supervisor. In some restaurants, you may be required to clean or scrub down the refrigerator weekly, but some supervisors would only require you to do this seasonally. Seasonal tasks will also include cleaning utensil drawers, scrubbing cupboards and cleaning kitchen filters.
It is important to stock up on cleaning supplies, so you won’t have problems doing your tasks quickly. A restaurant kitchen is not easy to clean. We all know that! With food everywhere and plates everywhere, cleaning a restaurant kitchen can be a huge headache
